Desire for the grill

Ingredients
  

The grill

  • 8 prawns
  • 4 scallops
  • 8 squid
  • Salt

Basil sauce

  • 60 g basil
  • 1 ice cube
  • Salt
  • 90 ml extra virgin olive oil

To finish

  • Mixed sprouts
  • Edible flowers

Instructions
 

The grill

  • Preheat the grill. Cook the prawns for 2 or 3 minutes or just until the shell changes colour.
  • Cook the squid and the scallops on both sides, for a few minutes. Season with salt.

Basil sauce

  • Place the basil in the blender with the ice cube and start blending at low speed. Add salt and a stream of olive oil. Continue to blend to a basil sauce.

To finish

  • Place the scallop in the centre of the plate and arrange the prawns and squid on topand around. Garnish with basil sauce, sprouts and flowers.
